Stuffed Pork Chops w/ Gouda, Basil & Garlic

Ingredients: 

2 oz Basil & Garlic Gouda cheese shredded (available at Pottstown Meat & Deli)
4 slices Pottstown's Hickory Smoked Bacon
1/4 cup fresh parsley - chopped
1/8 teaspoon Ultimate Steak & Roast Rub (available at Pottstown)
2 - 2 1/4 inch thick center-cut bone-in pork chops (we will special cut any thickness for you)
1 teaspoon Frantoia olive oil
another 1/2 teaspoon Ultimate Steak & Roast Rub

Instructions: 

Start grill or preheat oven to medium heat.

In a small bowl, combine the cheese, bacon, parsley, and 1/8 teaspoon Steak Rub.

Lay chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the chop going all the way to the bone while elaving the sides intact.  (If you are uneasy performing this operation, don't feel shy to ask us to cut the pocket for you at time of purchase.)  Stuff cheese mixture into pocket and close with a wooden toothpick.  Brush meat with olive oil and season the outside with the rest of the Steak Rub.

Lightly oil the grill grate.  Grill over medium heat for 5-8 minutes on each side, or until pork is done.  Be careful not to overcook!
